A castle is a group of buildings, including a keep and towers, with walls to defend against attacks. They oftentimes have moats, peep-holes in the walls from which to shoot arrows, and other defense-centric architectural touches. They will also serve as a fortress to guard whoever rules a province.
A manse is a residence designed for the very wealthy.
A palace is designed simply for elegance, lavishness, and luxury. They will include halls and other means of entertaining large numbers of guests. Palaces are always located in cities and rely on them for the defenses. They are usually surrounded by lush, landscaped gardens.
A stronghold (or military fortress) is a defensible location (not always a building) which can support at least a company (100) of men and which often provides excellent protection against ten times as many attackers.
A tower provides an elevated position from which to view or attack the surrounding area.
